Abstract

Oziq-ovqat sanoatida mahsulotlarning xavfsizligi va sifati muhim masalalardan biri hisoblanadi. Ayniqsa, oziq-ovqat allergenlari iste’molchilar salomatligi uchun jiddiy xavf tug’diruvchi omil sifatida e’tiborga olinadi. Allergik reaksiyalarni keltirib chiqaruvchi komponentlarni aniqlash, ularni klassifikatsiya qilish hamda nazorat qilish zamonaviy oziq-ovqat texnologiyasining muhim yo’nalishlaridan biridir.
